Honey Oatmeal Bread

Combine water, honey and butter in a small saucepan. Heat the mixture over low heat until liquids are very warm. Place 4 cups flour, oats, salt and yeast in bowl, and mix. Add warm liquids to flour mixture and mix, add eggs and mix. Mix and knead dough into remaining flour. Knead until smooth and elastic. Place in a greased bowl, turning to grease top. Cover and let rest until double in size. Punch dough down and divide in half *. Shape each half into a loaf and place in a greased loaf pan. Cover and let rise in warm place until double in size. Combine water and egg white, **brush tops of loaves with mixture. Sprinkle with oatmeal. Bake at 375 degrees for 35 minutes. Remove from pans and brush all surfaces with cooking oil or shortening.

*For making 4 1 pound loaves punch dough down and divide into fourths, shape and place on a lightly greased cookie sheet (or use parchment paper). Let rise until doubled.

**Bake at 375 degrees for 20-25 minutes.

2 - 2 pound loaves or 4 - 1 pound loaves

This can be made to through the first rise, shaped and then frozen to be baked later. Take out of freezer, and either grease or oil each loaf. Cover with plastic wrap that has been sprayed with oil and then cover with a towel. It will take anywhere from 4-8 hours to rise. Finish from ** above.
